Harvested by hand from our plots facing south which are surrounded by Olive and Almonds trees, & aromatic plants such as rosemary and thyme, the typical flora of our region. The vineyards are composed by old vineyards of over 45 years old.

CAVA de REQUENA
The grapes are gently pressed at no more than 0.5 bars, and we syphon off just the first, superior part of the grape juice in order to be able to achieve the refinement expressed by this Cava de Requena. The grape juice extracted from the press is decanted and left to settle for 24 hours. Following the “ Metodo tradicional” a secondary fermentation takes place in the bottles and they are kept for at least 24 months on lees in the darkness of the caves, gaining day by day in complexity, velvety roundness and ultrafine bubbles. In the dosage we use the same wine base, seeking to honor the original characteristics of this cava.

A vintage sparkling tribute to the purity of Macabeo at high-altitude, MEMORIAS BRUT RESERVA embodies elegance and sophistication.
Crafted from 100% old Macabeo vines, this wine is aged on lees for a minimum of 24 months in an underground, dark, temperature-controlled cava using the traditional method with brut dosage. The result is a refined golden color sparkling wine with fine, high-quality, and persistent bubbles. It showcases delicate aromas of golden apple, white flowers and briocheת and on the palate is serious, rich and combines length, vivacity.
